Brownies!

I made these this weekend. Yum.

They are called brownies but they are very, very rich and dense. More like fudge. I got the recipe from paleocookbook.com. Very tasty and you can eat them guilt-free!

Makes 10

Ingredients

½ cup coconut oil (solid)
½ cup cocoa powder
½ tsp ground cinnamon (I left this out)
½ cup coconut milk
2T honey (I used 4 T of maple syrup)
1 egg
1 cup almond meal (I used almond flour)

Instructions
Preheat oven to 325° Fahrenheit.

Place the coconut oil, cocoa powder and cinnamon in a bowl and combine well. Add the coconut milk, maple syrup, egg and almond flour and mix until combined.

Line a small brownie tin or cake loaf tin with baking paper. Spoon the brownie mixture into the tin and smooth the surface of the mixture.

Place in the oven for 20 minutes. Remove and allow to cool to room temperature before transferring to the refrigerator for 60 minutes. (I totally didn’t do this! I ate them warm!)
